Homemade veggie burgers are a delicious way to celebrate seasonal produce and fresh herbs. Inspired by some delicious recipes, my husband and I now wing it with whatever is on hand. If you can, make extra to refrigerate or freeze and re-heat later in the toaster oven or skillet. They\u2019re also perfect for wraps and as salad toppings.<\/p>\n

Pick one or two items from each category, or branch off to try even more ingredients.<\/p>\n

Vegetables<\/h3>\n
    \n
  1. Grated Zucchini (raw)<\/li>\n
  2. Grated Summer Squash (raw)<\/li>\n
  3. Sliced Mushrooms (saut\u00e9ed)<\/li>\n
  4. Chopped Celery (saut\u00e9ed)<\/li>\n<\/ol>\n

    Flavor<\/h3>\n
      \n
    1. Minced Garlic Cloves (raw)<\/li>\n
    2. Finely Chopped Onions (raw)<\/li>\n
    3. Spices: Whole Cumin Seeds, Turmeric Powder, Coriander, Crushed Red Pepper, Black Pepper<\/li>\n
    4. Herbs: Rosemary, Basil, Thyme, Oregano\/Savory, Dill, Parsley, Sage (fresh, if possible)<\/li>\n<\/ol>\n

      Protein<\/h3>\n
        \n
      1. Chickpeas (cooked, mashed)<\/li>\n
      2. Black Beans (cooked, mashed)<\/li>\n
      3. Black-Eyed Peas (cooked, mashed)<\/li>\n
      4. Pinto Beans (cooked, mashed)<\/li>\n
      5. Canned Salmon (drained)\u2026 ok, it\u2019s not veg, but it\u2019s yummy<\/li>\n
      6. Crumbled Feta or Grated Cheddar or Parmesan<\/li>\n
      7. Crumbled Tofu or Tempeh<\/li>\n<\/ol>\n

        Sticky Carb<\/h3>\n
          \n
        1. Precooked Rice<\/li>\n
        2. Precooked Quinoa<\/li>\n
        3. Shredded Potato (partially cooked, then grated)<\/li>\n
        4. Whole Wheat Bread Crumbs<\/li>\n
        5. Mashed Winter Squash or Sweet Potato (cooked)<\/li>\n<\/ol>\n

          Plus<\/h3>\n
            \n
          1. 1 or two eggs (or some ground chia or flax seeds and water)<\/li>\n
          2. Salt and pepper to taste<\/li>\n<\/ol>\n

            Mix all ingredients together, form into patties (2-3 inches in diameter, 3\/4 inch thick). In a skillet, cook in olive oil on medium heat, about three minutes per side or until golden and cooked through.<\/p>\n
